A TripMag World Food Atlas recipe for Pastilla with Chicken & Almonds, inspired by Morocco home cooking.
Preparation and cooking: 75 min
Yield: 6 servings
Ingredients
- 700 g chicken thighs
- 2 onions
- 3 eggs
- 100 g almonds
- cinnamon
- ginger
- saffron
- 8 filo sheets
- 50 g butter
Method
- Heat the oven to 190°C conventional / 170°C fan. Cook chicken thighs with chopped onion, ginger, cinnamon, saffron and a splash of water in a covered pan until cooked through and tender, about 25–35 minutes.
- Lift out the chicken and shred when cool enough to handle. Reduce the cooking liquid until concentrated, then stir in beaten eggs over low heat, stirring until softly set rather than scrambled dry.
- Toast the almonds, chop finely and mix with a little icing sugar and cinnamon if desired. Brush a round ovenproof dish with melted butter and layer filo sheets, allowing the edges to overhang.
- Add the chicken, egg mixture and almonds in layers. Fold the overhanging filo over the filling, cover with more buttered filo and tuck the edges underneath.
- Bake for 25–35 minutes until crisp and golden. Rest for 5 minutes, then dust lightly with icing sugar and cinnamon before slicing.

What defines this version of Pastilla with Chicken & Almonds
This TripMag home-kitchen version is built around the ingredients and method shown on this page. Recipes can vary between households and regions, so the measurements here are a practical starting point rather than a claim that there is only one authentic formula. The most useful guide is the balance of flavour, texture and technique described in the steps.
The ingredients doing the main work here include chicken thighs, 2 onions, 3 eggs, almonds. Read the full list before cooking, check which items need preparation in advance and make sure you have the right pan, oven tray or serving equipment ready. This small amount of preparation helps the method run smoothly and reduces the chance of overcooking something while searching for the next ingredient.
Technique checkpoints
Begin with this key step: Heat the oven to 190°C conventional / 170°C fan. Cook chicken thighs with chopped onion, ginger, cinnamon, saffron and a splash of water in a covered pan until cooked through and tender, about 25–35 minutes. Pay attention to the heat and texture described rather than relying on the clock alone; ingredient size, cookware and domestic appliances can all change the timing slightly.
As you approach the finish, follow the final stage carefully: Bake for 25–35 minutes until crisp and golden. Rest for 5 minutes, then dust lightly with icing sugar and cinnamon before slicing. Taste where appropriate and make small adjustments, rather than adding a large amount of salt, acid, spice or liquid all at once. For savoury dishes, season in stages and taste near the end. If the recipe includes several components, finish the slowest-cooking element first and bring the remaining elements together just before serving.

Ingredient swaps and preparation
If an ingredient is unavailable, first consider the role it plays: a liquid adds moisture, a fat carries flavour and affects texture, an aromatic builds the base, and a finishing herb or spice contributes a more distinctive note. A close substitute may work for a supporting ingredient, but replacing a defining ingredient can change the character of the dish. Where the method names a specific alternative, use that guidance; otherwise, make one change at a time and note the result.
For the most consistent outcome, weigh ingredients when measurements are given by weight, cut them to a similar size and avoid crowding the pan. Keep raw meat, poultry, seafood and their utensils separate from ready-to-eat foods. Cook animal proteins thoroughly, chill leftovers promptly and reheat them until piping hot.
How to serve and store it
Pastilla with Chicken & Almonds is best served in the way suggested by the final method, while its intended texture and temperature are still present. If you are planning a larger meal, prepare components that tolerate resting first and leave any crisp, fresh or delicate finishing elements until the last moment. The serving suggestion should complement the main flavours rather than compete with them.
For make-ahead cooking, cool leftovers promptly, store them covered in the refrigerator and use them within a sensible food-safety window. Keep sauces or toppings separate when that helps preserve texture. If the recipe contains ingredients that do not freeze well, prepare the base ahead and complete the final cooking step shortly before serving.
