Cha yen
Thai Iced Milk Tea
Cha yen is strong Thai tea, sweetened with condensed milk and poured over crushed ice, with a drizzle of evaporated milk on top. The tea is made strong because ice and milk dilute it. The orange colour comes from the mix, not from the tea itself.
The first recipe steeps 1 tbsp of Thai tea in 240 ml of boiling water and stirs in 2 tsp each of condensed milk, evaporated milk and sugar, then pours it hot over crushed ice.
The second makes a jug from 1 1/2 cups of tea mix and 6 cups of water, steeped 30 seconds, strained and sweetened with condensed milk; the author notes the orange colour comes from food colouring in the mix.
